Jacuzzi Chicken Nachos are just what you to celebrate this Cinco de Mayo! Slow cooked shredded jacuzzi chicken is layered with muenster cheese and smoky chipotle corn salsa on crispy tortilla chips. Bake until the cheese is melty and then top with green onions, cilantro and avocado crema.
Pat went back to work this week after having nearly 2 months off. With the exception of a few weeks of being on call, he’s been home. We’d eat breakfast every day, do projects around the house and have game nights with our girls and it never got old. Although a little bittersweet, I’m thankful he has a job to go back to and it feels good to see life return back to some form of normalcy. Whatever that may mean.
With that said, we celebrated Cinco de Mayo a little early.
I made a batch of jacuzzi chicken, smoky chipotle corn salsa and layered it between tortilla chips and muenster cheese for the most epic nachos yet.
Toppings can be whatever you like; thinly sliced radish, green onions, cilantro, avocado Crema and hot sauce is the route we went. And boy was it delicious.
To Make These Jacuzzi Chicken Nachos You Will Need:
- tortilla chips – try to find thick and sturdy chips
- muenster cheese – my favorite cheese for nachos because it melts like a dream
- jacuzzi chicken
- smoky chipotle corn salsa
Optional toppings include: sliced radish, green onions, cilantro, avocado crema and hot sauce
Preheat your oven to 325℉ or (160℃).
Grab a skillet, sheet pan or casserole dish. Layer with thick sturdy tortilla chips, a little cheese and some of the shredded chicken.
Top a little of the smoky chipotle corn salsa.
Repeat with a second layer of chips, cheese, chicken and salsa.
And a final layer of shredded muenster.
Slip the pan onto the middle rack of your preheated oven and bake for 10 to 15 minutes or until the cheese is melted and golden in spots. Once out of the oven, sprinkle with sliced green onions and minced fresh cilantro.
Top with the avocado crema, hot sauce and thinly sliced radish if desired.
The best nachos ever. Now grab a chip and cervesa, por favor and prepare to fall in love.

Jacuzzi Chicken Nachos
Ingredients
FOR THE NACHOS:
- tortilla chips, thick and sturdy
- muenster cheese
- jacuzzi chicken
- smoky corn salsa
- green onions, for serving
- minced cilantro, for serving
- sliced radish, for serving
- hot sauce, for serving
FOR THE AVOCADO CREMA:
- 1/2 cup plain non fat greek yogurt, or sour cream
- 2 tablespoons mayonnaise
- 1 medium avocado
- 1/2 large lime, juiced
- 1 clove garlic
- 1/2 teaspoon sugar
- kosher salt to taste
Instructions
FOR THE AVOCADO CREMA:
- In the bowl of your mini food processor add greek yogurt, avocado, lime juice, garlic, sugar. Blend until smooth and season with a pinch of salt, to taste.
- Thin with a little water to drizzle over nachos.
FOR THE NACHOS:
- Preheat your oven to 325℉ or (160℃).
- On a rimmed sheet pan or in a skillet, layer tortilla chips, a little cheese, shredded chicken, corn salsa, more cheese and repeat.
- Bake on the middle rack of your preheated oven for 10 to 15 minutes or until the cheese has melted.
- Top with green onions, cilantro, avocado crema and hot sauce.

This looks very delicious on the nutritional information how do I determine what is 4 servings? So that I can figure out what one serving is. Is that one whole bag of corn chips? How do you determine this thank you very much.
Typically I divide about 1 (14 ounce) bag of chips for 4 people. However, the jaccuzzi chicken recipe will yield more than 4 servings as will the corn salsa. Please keep in mind, these nutritional information numbers are estimates. Enjoy!
I made the Jacuzzi Chicken Nachos for our quarantine Cinco de Mayo dinner and received rave reviews from the family. I was worried it be too spicy for the kids so I skipped the jalapenos in the salsa but besides that I followed the recipe step by step and got a “Best nachos I have ever had” & “love the radishes on top”. The avocado crema is delicious! I will definitely be making this again!
