This raspberry pistachio salad is my latest obsession.

I’ve made it just about every day for the past few weeks. I do add grilled chicken (yes, I’m still grilling in these freezing Michigan temperatures) to get some protein so I stay fuller for longer. Not only is this salad delicious but it’s also so easy to pull together. I’m not the biggest fan of making lunch so if it’s easy, I’m more likely to make it. And this salad is quick and easy and so so good!

I particularly love the crunchy pistachios and feta cheese😍

To make This Raspberry Pistachio Salad You Will Need:

  • leafy salad greens
  • raspberries
  • pistachios
  • feta cheese
  • raspberry walnut vinaigrette

Raspberry Walnut Vinaigrette

Make The Raspberry Walnut Vinaigrette:

I shared the recipe for my creamy raspberry walnut vinaigrette on Monday. This recipe is so easy and takes only minutes to make.

Note: If you don’t want to make the dressing. Ken’s makes a light raspberry walnut vinaigrette that’s pretty amazing.

Build The Salad:

In a shallow bowl or plate, add 2 to 2-1/2 ounces leafy salad greens – really however much you like! Top with 1/2 cup fresh raspberries, about 1 tablespoon chopped pistachios and 1/2 ounce crumbed feta cheese.

Drizzle with 2 tablespoons of the raspberry walnut vinaigrette.

Season with some freshly ground black pepper.

That’s it! Feel free to add any protein you prefer to make this a more satiating salad!

  • 2 to 2½ ounces leafy greens
  • 1/2 cup fresh raspberries
  • 1/2 ounce crumbled feta cheese
  • 1 tablespoon chopped pistachios
  • 2 tablespoons creamy raspberry walnut vinaigrette
  • freshly ground black pepper

Instructions 

  • In a shallow bowl or plate, add leafy salad greens. Top with raspberries, feta cheese and chopped pistachios. Drizzle with vinaigrette and season with a little freshly ground black pepper.
