This Black Bean and Corn Soup was inspired by a local restaurant. This soup is filled with good wholesome vegetables that will warm you up on a cold day.
According to my inner fall clock it’s officially soup season
I’m kicking of soup season with my newest, favorite-ist and uber delicious… black bean and corn soup. I really should call it black bean soup with sweet corn, charred red pepper and poblano with fire roasted tomatoes soup but I’m thinking that might be a smidgen over the top.
Last week my wonderful friend Nichole and I had lunch at one of my favorite restaurants The Clarkston Union. We both ordered the soup of the day, black bean and corn (who wouldn’t!?) and it is absolutely without a doubt AMAZING. As I shoveled the soup into my mouth and in between gabbing about life, I cataloged the ingredients, flavors and textures of this soup and started recipe developing asap.
Let me just tell you figuring out this soup wasn’t easy.
When I asked her about what she thought was in the soup we had conflicting ingredients. I said those red chunks are red bell pepper, right? Nichole said tomato. I said do you taste the poblano pepper… she’s like uhh I think that’s green pepper Laurie. GAH? Which is it? I thought about asking the waitress. I do that all the time and it’s probably obnoxious. But I thought against it and so I guess this won’t be a complete copy cat recipe because it’s not likely the chef is going to hand over his recipe to little ol me, but it’s still darn delicious nonetheless.
To Make this Black Bean and Corn Soup You Will Need:
- red bell pepper
- poblano pepper
- black beans, un-drained, divided
- olive oil
- celery
- white onion
- fresh garlic
- cumin
- ground chipotle pepper
- smoked paprika
- diced fire-roasted tomatoes
- sweet corn (frozen or fresh)
- low-sodium vegetable broth
- kosher salt
- black pepper
- lime juice
- fresh cilantro, for garnish
Char the peppers:
Preheat it to medium-high, spritzed a red bell pepper and poblano pepper with a little olive oil and grilled them until the skin bubbled and blistered. The whole thing took about 15 minutes. Then I threw them into a bowl and covered it with plastic wrap so the steam could work its magic in between the flesh and skin of the peppers. You could also do this under the broiler, just keep a watchful eye on them.
After about 15 minutes it was time to peel these beauties.
The skin should easily peel away. I like to keep a garbage bowl nearby so I can chuck the skin, seeds and stems in it as I go.
After the peppers are peeled and seeded I sliced them into strips and then diced them into cubes.
Make The Soup:
Slice up 2-4 celery ribs {about a cup}, a medium white onion and 5-6 cloves of garlic.
I emptied all the cans of black beans into one bowl, then I measured out about 1 1/2 cups of beans and put them in a different bowl and used my Pampered Chef mix ‘n chunk and smashed them up. This is going to thicken the soup later, so set those smashed beans off to the side for a moment.
In my 4 quart Rockcrock on medium-low heat, I added a tablespoon of olive oil and threw in the celery, onions and garlic.
Once the vegetables start to soften I add in the two teaspoons of cumin, 3/4 teaspoon of chipotle pepper and 1/4 teaspoon of smoked paprika.
Gave those a stir and cooked for 1-2 minutes before adding lots of freshly ground black pepper. About 1/4 teaspoon.
Next add in the fire-roasted tomatoes, peppers, poblano and sweet corn.
Add the black beans that are still whole…
The vegetable broth…
And stir.
Bring to a boil… reduce to a simmer…
Add in the mashed beans, this will help thicken the soup a bit. Let’s face it; mashed black beans aren’t pretty, like at all.
Season with salt. This is entirely to taste. I say about 1-1/2 teaspoons to 2. But you taste and add as you go.
Cover and simmer for about 45 minutes.
Meanwhile… I made the best quesadillas your lips will ever have the pleasure of wrapping themselves around. Mexican three cheese… that’s 1-2-3 cheeses. Lord have mercy.
Spray a large griddle or skillet and preheat to 350 or medium-ish heat. Lay down one tortilla and top with a little of both Chihuaua cheese and jack. Top with homemade pickled jalapenos {if you heart so desires} and top with the cotija. Layer another tortilla on top and when the bottom gets crispy and golden, flip. Sprinkle more cheese on the now crispy top and more jalapenos if you wish, and then another soft tortilla. Just like before, when the bottom gets crispy flip and griddle until golden.
Triple-cheese-triple-decker-quesadilla folks!
Cut into wedges and enjoy.
This black bean and corn soup is fantastic. Smoky, vegetable loaded and total guilt-free when you pour yourself another bowl. I mean just look at those vegetables and beans. All the flavors from the soup I had at lunch the other day PLUS more. It reheats nicely so leftovers are a must… they might even be better than the day before because they’ve merry in the fridge over night.

Black Bean and Corn Soup
Ingredients
- 1 medium red bell pepper
- 1 poblano pepper
- 4 (15 ounce) cans black beans, (do not drain) divided
- 1 tablespoon of olive oil
- 1 cup celery, sliced
- 1 medium white onion, diced
- 6 cloves garlic, minced
- 2 teaspoons ground cumin
- 3/4 teaspoon ground chipotle pepper
- 1/4 teaspoon smoked paprika
- 1 (15 ounce) can diced fire-roasted tomatoes
- 1 cup sweet corn, frozen or fresh
- 1 quart low-sodium vegetable broth
- freshly ground black pepper, to taste
- kosher salt, to taste (for me it was about 1½ to 2 teaspoons)
- 1/2 lime, juiced
- fresh cilantro, for garnish
Instructions
MAKE THE PEPPERS:
- Preheat your grill to medium-high heat. Wash and pat dry a medium red bell pepper and poblano. Lightly spray them with olive oil. Once the grill is hot, set the peppers on the hottest part of your gill. Grill the peppers for 10-12 minutes, turning occasionally until the skin chars and blisters. Remove and place into a clean bowl and cover tightly with plastic wrap. Let the peppers sit for 15-20 minutes before removing. Peel the skin off, remove the stem and scrape out the seeds before dicing.
MAKE THE SOUP:
- Place a cup and a half of the black beans into a bowl. Smash them with a fork until only small pieces of bean remain. Set it off to the side.
- In a 4 to 5 quart Dutch oven; heat a tablespoon of olive oil over medium-low heat. Add the celery, onion and garlic and saute until they're just starting to soften.
- Add the cumin, chipotle powder, smoked paprika and black pepper - about 1/4 teaspoon. Stir and cook for another minute or two. Next add in the fire-roasted tomatoes, the bell pepper, poblano and corn. Pour in the vegetable broth and the portion of beans that are left whole. Stir and bring to a boil.
- Pour in the smashed black beans and stir. Reduce the temperature to simmer, cover and cook for 45 minutes.
- Taste and add salt to your preference. Right before serving, stir in the lime juice.
- Garnish with freshly torn cilantro leaves.

Although we are approaching summer here in Australia it’s not officially “soup season”, but as far as I’m concerned the season for soup is not just limited to the warmer months.
Our family loves to try new recipes and this one looks so hearty and tasty.
Anything that has to to with roasted capsicum gets my tick of approval 🙂
Oooh…now that we’ve had our first rainy, chilly autumn days, all I want to make is soups and stews! Homemade beef stew, homemade chicken noodle soup, matzoh ball soup (from the package the way my auntie taught me). Toss a whole bunch of things in a pot and hope for the best soup…yum!

I’m going to go different and say paella (maybe just cause I’ve been craving it lately.) I could also totally see rocking chili or potato soup in this bad boy. I’m just amazed at the plethora of yummy goodness I find here each day.
As a 77 year old with a meat & potatoes appetite, I need to start eating more vegetables. Soups and stews seem the ideal way to enter vegetable into my diet. I must admit that a Dutch oven would make that task much easier along side the wonderful recipes that you give us.

Oh man where do i start… I LOVE the crockpot (or in this case, rockpot). My problem is mine does not have a timer so the 9-10 hours i’m away and can’t switch it to “warm”, things tend to over cook. First I’d grill my chicken in it,then put the crock on the stove,place chicken on plate to cool, add water to the pot and boil pasta. till cooked, drain water,add cream of chicken soup, frozen broccoli, Dice chicken and add to pot. stir well cover,bake till bubbly. Remove cover sprinkle with cheese and broil till bubbly and hot. Place crock on table and serve family style. Great meal,1 pot no hassle no mess!

A “New England Boiled Dinner” Corned beef and cabbage with potatoes, carrots and onions simmered for hours so the house smells so yummy. Oh and home made rolls right out of the oven.
Chicken and Dumplings
I love the idea of preparing my Iowa Pork Stew (very Iowa with chunks of pork and, of course, corn) ahead of time and freezing it. Then pop it in the oven for a long, slow cook. It is so tender and thyme-y. My go to winter meal with, what else, CORN cakes!
I would be making southern Hoppin’ John on New Year’s Day! It is a family tradition shown to me by my southern Mother-In-Law. Love the idea of making it & straight to the freezer in the same dish!

I would love to try a cut up chicken seared and cooked with seasonal veggies in a creamy wine something. I’ve never cooked in a dutch oven, but it’s something I’ve always wanted to try.

This looks very versatile. Would love it to make chicken tortilla soup, chili, pasta red sauce or french onion soup. The possibilities are endless!

I love cooking low and slow. To that end I would make our:
BEEF STEW WITH ROASTED VEGETABLES
CHUCK ROAST LIGHTLY TRIMMED, CUT INTO SMALL CHUNKS = 3 ½ POUNDS
SAVED BACON FAT
1 CUP FLOUR
1TEASPOON KOSHER SALT
½ TEASPOON FRESHLY GROUND BLACK PEPPER
COMBINE FLOUR, SALT AND PEPPER
HEAT BACON FAT IN CAST IRON PAN, ROLL THE BEEF CHUNKS IN THE FLOUR MIXTURE ONE BATCH AT A TIME. BROWN THE MEAT IN THE FRY PAN BEING CAREFUL NOT TO CROWD THE PAN. BROWN ALL SIDES THEN TRANSFER TO HEAVY DUTCH OVEN. DEGLAZE THE PAN WITH A LITTLE WINE AND WATER IF NEEDED.
HEAT OVEN TO 325°
ADD TO THE DUTCH OVEN:
3 TABLESPOONS WORCHESTERSHIRE SAUCE
2 YELLOW ONIONS PEELED, QUARTERED
3 STALKS OF CELERY WITH LEAVES CHOPPED FINE
1 WHOLE BULB OF ROASTED GARLIC SQUEEZED OUT
8 CLOVES RAW GARLIC SLICED
A HANDFUL OF SUN DRIED TOMATOS
2 BAY LEAVES
½ TEASPOON CRUSHED RED PEPPER
1 CUP BEEF STOCK
1 PORTION OF KNORR CONCENTRATED BEEF STOCK
1 CUP ZINFINDEL WINE
A HANDFUL OF FLAT LEAF PARSLEY CHOPPED FINE
Rushton’s stew. It is loading with lots of good things, pan browned cubed chuck roast, home grown sun dried tomatoes, a ton of fresh garlic and a whole roasted garlic, onion, 2 bay leaves,
When I take the stew out to rest for 30 minutes I have a prepared pan of vegetables ready to put in the oven to roast. When its time to serve I pour the stew over roasted vegetables in individual bowls.
Typical Vegies:
Pasnips, turnips, brussel sprouts, potatoes, carrots

CHILI!!!! although I really like your black bean n corn soup recipe here, so I would probably do that one too! but it would be really nice to make two batches of my chili, one in the rockcrock and then stick it in the freezer for another meal another day!

There are lots of our favorite soups I would make in this pot like cabbage soup, chili, beef stew, vegetable soup. We would also enjoy creamed chicken over rice or biscuits, carmel corn, pasta dishes, hoe groeen green beans with bacon slow cooking all day 🙂 Homemade applesauce….and the list could go on!!! It will be the pot that I would use with every meal 🙂

Some homemade turkey and noodle soup would be first, then some three bean chili and then……….goodness i can think of much more than one recipe i would use in it.
I would roast chicken with sweet potatoes featuring a ton of fresh garlic and rosemary sprigs. Top it off with sea salt and chipotle powder. Super yummy and a favorite in my household! You can steal it, if you like! 🙂
