This Pineapple Salsa Recipe is fresh, sweet and has spicy kick! Fresh pineapple is tossed with red onion, jalapeño, cilantro and lime juice. Perfect served with tortilla chips or as a topping to pretty much anything grilled! This recipe yields 3-1/2 cups.
Sometimes the most simple recipes are the tastiest.
And this time of year is my favorite because produce is at its prime! Now if you’re wondering why I waited until after Cinco de Mayo to share my pineapple salsa recipe, well that would be because I don’t specifically use it for Mexican-themed meals. Don’t get me wrong, I could do some damage with a bowl of this salsa and a bag of Siete chips. But it’s also delicious on grilled chicken, fish or shrimp and pork. I’ve even served it with my flank steak tacos.
What I love most about this salsa is that it’s so fresh, sweet with a little spicy kick from the jalapeños.
To Make This Pineapple Salsa Recipe You Will Need:
- fresh pineapple
- red onion
- jalapeño
- cilantro
- fine salt
- lime juice
In a bowl, add 1 pound fresh pineapple that is diced into small cubes. Then add in 1/2 cup finely chopped red onion, 1 (large) jalapeño (seeded for less heat) diced small. Lastly add in 1/4 cup chopped cilantro.
Add in a pinch of fine salt.
And squeeze in the juice of 1/2 a lime.
Toss and serve!
I prefer to make this and serve immediately. The texture can change a bit if you make it too far in advance.
Serve with your favorite tortilla chips as an appetizer, or as a topping to your favorite grilled chicken, seafood, pork or steak recipe.

Pineapple Salsa Recipe
Ingredients
- 1 pound fresh pineapple, diced small
- 1/2 red onion, diced small
- 1 jalapeño, seeded (for less heat) and diced small
- 1/4 cup cilantro, chopped fresh, more or less to taste
- 1 pinch of fine salt, to taste
- 1/2 lime, juiced
Instructions
- In a bowl combine; pineapple, onion, jalapeño and cilantro. Add a pinch of salt (to taste) and squeeze in the juice of 1/2 a lime.
- Toss to combine and serve immediately.
