Got guests coming? Need an easy appetizer? It’s as simple as 3 ingredients and viola you got yourself a rockin’ app to serve! I made this for the adults at my daughters 6th birthday party and they went fast… the adults and the kids liked them… okay maybe it was just my kid… but bacon wrapped anything will go fast! Am I right?

It was love at first sight and I had to make them. It had wonderful reviews and I have been thinking of these ever since I saw them. Bacon…. Wrapped… Pineapple!!!! So I didn’t follow the directions (maybe because I didn’t read them?) I probably should try to follow directions better. But I am a Virgo so I just did it my way.
Which isn’t always the best way, except it is to me of course!
See I don’t have one of those oven safe baking racks. If you don’t have one I highly HIGHLY recommend getting one! It will make the cooking so much easier, it raises the bacon wrapped pineapples away from the pan so it can crisp all the way around and not sit in its own juices. When I make these again.. I will for sure use one! But hey lesson learned… don’t get me wrong… they were still delicious and I am still posting this recipe because I need to spread the word of these heavenly bites!
I love the sweet juicy pineapple with the crispy salty bacon and the brown sugar… oh boy!
Start off with the pineapple.
The original recipe calls for canned…but I am using fresh. To me canned pineapple tastes completely different then the real stuff and I just like fresh pineapple a thousand times better!!
Cut the pineapple in half lengthwise.
Then in half again (quartered).
And in half again…
Now just cut them into 1 inch chunks. Keep ’em kind of big in size.
Until you have about 20-25 pieces of pineapple…
Any extras can be placed into a container and stored in the fridge for later.
Then comes the part of wrapping them in bacon! *sigh* Wrap the bacon around the pineapple and trim off any overly fatty or excess bacon. If you have toothpicks feel free to secure the bacon to the pineapple {which is also highly recommended}.
As you can see I didn’t have the toothpicks but I arrange the pineapple bites (bacon seam down) on a baking sheet (or two) or if you have one of those baking racks… use it and place in a preheated 350 degree oven for about 20 minutes. If the bacon is still soft after 20 minutes preheat the broiler to low and sprinkle with dark brown sugar. Watch carefully so the brown sugar doesn’t burn… and remove when they look like this…

Bacon Wrapped Pineapple Bites
Ingredients
- 1 pineapple, cored and cut into chunks
- 1 pound thin sliced bacon, cut in half
- 2-3 tablespoons dark brown sugar
Instructions
- Preheat oven to 375 degrees.
- Wrap each chunk of pineapple in a half a slice of bacon, trim off any fatty or excess bacon.
- Place on a wire baking rack or on a lined sheet pan.
- Bake for about 20 minutes... remove and sprinkle with brown sugar and preheat broiler to low.
- Place the pineapple bites under the broiler for a few minutes. Keep your eye on these so they don't burn.
- Let cool slightly and serve!

This is so perfect! I love bacon and if it's wrapped around fruit it's healthy, right? My aunt makes bacon wrapped water chestnuts in a soy sauce every Christmas and I've been known to eat a panful and I don't even like water chestnuts much. These are dangerous! Thanks for posting it!
