Barbecue Bacon Pineapple Quesadillas are the perfect combo of sweet pineapple, barbecue sauce and smokey bacon stuffed into cheesy quesadilla!

About four days or so ago I was thinking about two of my favorite pizzas… The “Hawaiian” and the “barbecue chicken”. I thought about how I love the salty smoky bacon with the sweet juicy pineapple… and then I remembered about my love affair with a certain barbecue sauce and how I haven’t stop finding excuses recipes in which to scarf.it.down!

With that said, I decided to do what any self-respecting foodie would do… and marry those two in a culinary matrimony… and then stuff them in a quesadilla. Genius? I think so!

What I love most about any ‘dilla is that they can be relatively quick and easy. I love a crispy exterior and a cheesy interior, and when stuffed with other delicious ingredients {i.e. bacon} they can make for a satisfying lunch {or snack}.

So to be totally obvious… you’ll need bacon, pineapple, tortillas… some thinly slice red onion and a little of my homemade barbecue sauce… oh and then there’s of course cheese, lots of it too!

Grab some pineapple. I found these spears at my grocery store and since I didn’t need all of them… I snacked on the rest in the meantime.

Slice those babies up and set them off to the side.

Next chop up 8 ounces of bacon into small pieces. It’s already smelling  HEAVENLY!

Throw the bacon into a hot pan that has a little bit of olive oil. Then cook until the bacon is nice and crispy. When the bacon is perfectly crispy remove with a slotted spoon and place it on a paper towel lined plate. Yup, I also snacked on a couple of those too.

Heat up your griddle or a large 10 inch skillet over medium-medium high and spray with your Misto or cooking spray. This will help get a nice crust on the tortillas.

Speaking of tortillas, throw one on the preheated griddle {or pan}.

Move quickly by topping the tortilla with a little grated Mozz…

…Then a little sliced fresh pineapple…

Sprinkle with the bacon and a few thinly sliced red onions…

And then drizzle with a little of the homemade barbecue sauce. Don’t go overboard because it will just drip out {see above}. I always have a small dish next to me so I can dunk them in more of that liquid gold.

Next, using a spatula, fold and continue to cook your Barbecue Bacon Pineapple Quesadillas for a minute or two.

Barbecue Bacon and Pineapple Quesadillas

Sweet meets smoky meets cheesy!

Ingredients

  • 8 ounces bacon, diced and cooked until crispy
  • 4 ounces mozzarella cheese, grated
  • 4 tortillas, 6 or 8-inches
  • 1/2 cup diced fresh pineapple
  • 1/2 red onion, thinly sliced
  • 4 tablespoons Homemade Barbecue Sauce, plus more for dipping

Instructions 

  • Preheated an 8 inch skillet over moderate heat.
  • Once hot add in diced bacon and cook until crispy. Remove with a slotted spoon to a paper towel lined plate.
  • Spray a preheated griddle or 10 inch skillet with your Misto or cooking spray.
  • Lay a tortilla down and top with Mozzarella, slice pineapple, cooked bacon and red onion. Lightly drizzle with a tablespoon of barbecue sauce.
  • Once the cheese is melted, use a spatula to fold the quesadilla in half and cook for another minute.
  • Remove the quesadilla to a cutting board to cool slightly before cutting it into wedges.
  • Serve it with a small dish of barbecue sauce on the side to dunk!
