This easy Homemade Chicken Noodle Soup is my go to recipe when I’m a little under the weather or wanting something cozy, but you don’t need to be sick to enjoy this comforting soup! Homemade broth with tender vegetables, and chicken, and the best part, the Kluski noodles! So deliciously comforting and good for you too!
Last week everyone in the house had colds but me. I bragged about how “I really think it has to do with me working at a hospital. I’m like super immune or something.”
And as if working in an ER with a bunch of sick patients all around isn’t enough to make ya wish you walked around in a bubble, being at home… completely surrounded by sickness might be worse. AND I can only handle hearing so much sniffling and complaining before I wanna scream. So for dinner I made us all grilled cheese sandwiches and a big pot of chicken noodle soup and guess what… everyone’s better!
But me.
After all the kiss-dodging, hand washing and Lysol spraying I still caught their colds. And now I’m sitting here with chapped lips, a wadded up tissue stuck up my left nostril and breathing through my mouth. Pretty glamorous huh? Yeah-not.
Anyone out there want to make me soup?
To Make The Homemade Chicken Stock For The Soup You Will Need:
- leftover bones from a cooked chicken (more on this later)
- carrots
- celery
- yellow onion
- parsley
- thyme (fresh)
- bay leaf
- black peppercorns
- water
How I Make the Whole Chicken For THE soup:
Place a whole chicken in your slow cooker with carrots, celery, onion, 1 cup of broth and sprinkle in a generous amount of poultry seasoning. Cook it on low and slowly for 7 to 8 hours. I then carefully remove the chicken (usually it’s falling apart) and when safe to handle, I pick the meat from the bone – saving both and discarding the skin. Next I pour the cooking liquids into a fat separator and once separated, pour out the juices leaving the fat behind. Save the liquids and discard the fat. The bones, meat and cooking liquids are used in this soup! Essentially, I follow this recipe (as far as the method for slow cooking) substituting in the poultry seasoning.
Drizzle a couple teaspoons of extra light olive oil into a heavy bottom pot.
Add in the bones from the chicken you prepared earlier. Heat on medium-high heat and cook for 8 minutes.
Meanwhile, prep some veggies. For the stock, you will need 2 carrots, 2 celery, 1 medium, yellow onion (root removed, papery skin left on), 4 to 5 sprigs of fresh thyme, 6 to 8 parsley sprigs, 1 bay leaf and a heaping 1/2 teaspoon whole peppercorns.
Once the bones have cooked, throw in the carrot, celery, onion, parsley, thyme, bay leaf and peppercorns. Pour in the 10 to 12 cups of filtered water and use a wooden spoon or spatula to scrape any brown bits that are stuck on the bottom of the pan.
If I have 2 cups of liquids after slow cooking a chicken, I only use 10 cups of water.
Cover and bring to a boil, then reduce the heat to medium-low for 1 to 1-1/2 hours.
To Make This Homemade Chicken Noodle Soup You Will Need:
- olive oil
- yellow onion
- celery
- carrot
- thyme
- slow cooker cooking liquids
- chicken stock (from above recipe)
- 6 ounces egg noodles (like Kluski)
- 2 cups chopped cooked chicken
- kosher salt
- freshly ground black pepper
In the last 20 minutes or so of the stock simmer, prep the soup veggies. Diced 1 medium yellow onion, slice two carrots and two celery stalks and roughly chopped a teaspoon of fresh thyme leaves.
Next, pour 2 teaspoons of olive oil in a large dutch oven and add in the prepared onion, celery and carrots with a generous pinch of kosher salt.
Stir , cover and cook for 8 to 10 minutes (stirring occasionally) or until the vegetables are tender. Then add in the minced fresh thyme, stir and cook 1 minute.
Next add in the leftover cooking liquids (if you have them) from slow cooking your chicken. If congealed, they will melt once they are in the hot pot.
Smells incredible.
When the stock has finished simmering, use tongs to remove any large vegetables or bones.
Set a sieve over the soup pot, and pour the stock you just made through it to catch any remaining bones or vegetables. Cover the pot and keep warm over low heat.
Meanwhile, bring a separate saucepan of water to boil. Add in a small palmful of sea salt and add in 6 ounces of the dried noodles. Cook according to the package directions or until al dente. Cooking the noodles separately keeps them from cooking in the soup and absorbing a lot of the broth.
Lastly, add the drained noodles and cooked chicken. Season with kosher salt and freshly ground black pepper to taste. For me it was about 2-1/2 teaspoons kosher salt. Stir to combine.
And poof. Homemade chicken noodle soup. And it’s the BEST homemade chicken noodle soup!
This bowl of goodness is just what ya need when you are chapped, stuffy, achy and in need of a hot and hearty bowl of soup to sooth your soul. Now, seriously, who wants to come over and make me some? Becud I kent breeve.

Homemade Chicken Noodle Soup
Ingredients
FOR THE CHICKEN STOCK:
- bones of 1 cooked chicken, meat and cooking liquids reserved for the soup
- 2 large carrot, roughly chopped
- 2 ribs celery (short stalks), roughly chopped
- 1 medium yellow onion, roughly chopped
- 6 sprigs parsley, roughly chopped
- 4 sprigs thyme
- 1 bay leaf
- 1/2 teaspoon black peppercorns
- 10 to 12 cups water
FOR THE SOUP:
- 2 teaspoons olive oil
- 2 medium carrots, sliced
- 2 ribs celery (short stalks), sliced
- 1 medium yellow onion, diced
- kosher salt
- any reserved cooking liquids from chicken, see notes
- 1 teaspoon chopped fresh thyme
- 6 ounces Kluski noodles
- 2 cups light and dark chopped cooked chicken, see notes
- freshly ground black pepper, to taste
Instructions
MAKE THE STOCK:
- In a large stock pot with the heat on medium-high, add in the chicken bones and brown for 8 minutes.
- Then throw in the chopped carrot, celery, onion, the parsley, thyme, bay leaf and peppercorns. Pour in 12 cups of filtered water (10 cups if using leftover cooking liquds - see notes) and scrape up any browned bits that are on the bottom of the pot.
- Cover and bring up to a boil, then reduce to a simmer and cook for 1 to 1-1/2 hours.
MAKE THE SOUP:
- When an hour has passed, start the soup. In a dutch oven, add the olive oil, onion, celery, carrot with a pinch of kosher salt. Cover and cook for 8 to 10 minutes, stirring occasionally until tender. Add in the thyme and cook 1 minute.
- Add the leftover cooking liquids from cooking the chicken. If congeled, the heat of the pan will liquify it.
- When the stock is finishe, use tongs to remove any large vegetables or bones. Then set a sieve into the soup pout and pour the stock through it to catch any remaining bones or veggies. Discard the remaining bones/vegetables. Keep the soup warm on medium-low heat.
- Meanwhile, bring a sauce pan of salted water to boil. Add the noodles and follow the package directions or until al dente.
- Add the noodles and chopped chicken to the soup. Season with kosher salt and groudn black pepper to taste.
- Serve with minced parlsey, crackers and more black pepper, if desired.

I’ve been sick for the last 2 weeks and made 3 batches of chicken noodle soup already. It’s better than any medicine. My mom used to make it for us whenever we got sick and I swear it has healing properties!

Chicken soup is called sopas in some parts of the Philippines.
I remember not feeling well back then when I was there and a friend cooked sopas for me (chicken soup with macaroni cubes and a lot of other local ingredients) and after taking it I almost got my strength back immediately.
There is really something in chicken soups that it makes us recover immediately from sickness. 🙂

I hope you feel better soon! Grilled cheese and soup is like my ultimate go to comfort meal even when im not sick. This soup soo good and I have only recently discovered the amazingness that is those liquid flavor boosters.
It sucks working in a petri dish. I work at a school, and kids are always handing me their cellphones, to talk to their parents. Yikes! I wash my hands a lot. My family just got over colds, and so far, I’m unscathed. I say that with caution though. I just made chicken soup, and smiled that we make ours the same. I’ve not seen those noodles, before, so I need to keep my eyes open for them. It’s a minor thing, but I found that making chicken soup in a pasta pot makes things easier. I can just lift out the liner and I have stock! I always roast my chicken, too, because I think it gives more depth of flavor. Nicely done. Wishing you a speedy recovery.

I love it! I’m around sick people all the time at the hospital I work at, and I usually only get sick when my fiance is ill. What’s up with that? I feel you on the clean bubble. I come home from work every night and take a scalding hot shower to kill the germs of the hospital off my body. I hate how nasty I feel from a 12 shift on the orthopedic floor, I can’t imagine how you feel in the ER!

Out of all the “homemade” chicken noodle soup I’ve perused, yours is by far the best. Canned broth and chunked breast the other recipes call for ain’t gonna cut it! And by using kluski, you are my instant hero. *hint- I always add a splash of a good dry white wine. Kudos to you!!!!!

I must say even though it is not fully cooked yet, the family has already taste tested and given two thumbs up. Only way that I modified the recipe was I added Okra. I’m super excited and cannot wait till its finished.when you have to sick children and you are sick yourself as well as a sick husband you are desperate for homemade chicken noodle soup. I do wonder though… Why does every recipe (of any soup with noodles) tell you to cook them before adding? I just throw the uncooked noodles in, let the post simmer for another ten mins and it is done, easy. Just curious to know if there is a reason for it?
