Grilled Garlic Cilantro Lime Shrimp are light and flavorful! Peeled and deveined shrimp quickly marinate in fresh cilantro, garlic, lime zest, juice and spices before grilling. Serve with rice or tuck into corn tortillas with your favorite toppings. Serves 4 to 6.

These grilled garlic lime shrimp skewers consist of a 10-minute marinade using fresh cilantro, lots of garlic, lime (zest and juice) and few spices before slipping on to skewers and quickly grilling. Enjoy as is with your favorite sides, serve over fluffy cooked rice or tuck into corn tortillas along with your favorite toppings.
Not only protein packed but super simple and just the thing for any day of the week.
To Make Grilled Cilantro Lime Shrimp You Will Need:
- cilantro – Lends a pop of bright herbaceous freshness.
- lime – Adds flavor and a touch of acidity.
- avocado oil – Adds richness and helps keep them from sticking to the grill.
- jalapeño – Adds flavor and subtle heat to the recipe. Can be optional.
- garlic – Adds distinct punchy flavor.
- kosher salt – Enhances the flavor of the dish.
- freshly ground black pepper – Adds some subtle bite and flavor.
- cumin (ground) – Lends earthiness and warmth, with an edge of citrus.
- coriander (ground) – Lends a citrusy flavor with a slight sweetness and subtle hint of earthiness.
- shrimp (peeled and deveined) – Use fresh or frozen. Thaw properly if frozen.
In a shallow dish add 1/4 cup minced fresh cilantro, the zest of 1 lime, 1/3 cup freshly squeezed lime juice, 1 tablespoon avocado oil, 1 finely minced (seeds removed) jalapeño, 3 cloves minced garlic, 1/2 teaspoon kosher salt, 1/4 teaspoon each freshly ground black pepper, ground cumin and coriander.
Whisk to combine.
Add 1-1/2 pounds of shrimp to the marinade.
Toss the shrimp in the garlicky goodness.
Allow the shrimp to marinate for no longer than 10 to 15 minutes (this will depend on the size of the shrimp) otherwise the acid in the lime juice will actually start to “cook” the shrimp, also known as ceviche.
Meanwhile preheat your grill to 500°
Thread the shrimp onto a double set of skewers. This will make it easier to turn them once on the grill. If using wooden skewers, it’s a good idea to soak them in water for 30 to 60 minutes ahead of time.
Once the grill is pre-heated, generously grease your grill grates. I do this by adding some avocado oil to a small bowl and soaking it up with a wad of paper towel. Use tongs to wipe the oiled paper towel on the grill grates.
Place the skewers on a preheated grill and cook for 3 to 4 minutes. I like to throw 2 lime halves on the grill as well – this gets them nice and juicy.
Flip and continue to cook for 2 to 3 more minutes or until the shrimp are opaque and cooked through.
Once grilled remove to a platter or board.
Once safe to handle, slip the grilled shrimp off the skewers and serve them on top of fluffy rice with a sprinkle of minced cilantro.
Top with a few extra slice jalapeños and a squeeze of fresh lime juice and a little sriracha or spicy mayo.
Other Ways To Serve Garlic Cilantro Lime Shrimp:
- Tuck into warm toasty corn shells with cabbage slaw and any favorite toppings.
- Serve on top of a salad with diced radish, carrot, avocado and toasted pepitas (etc.) with a cilantro vinaigrette.
- Enjoy as is with your favorite grilled summery side dish.

- 1/4 cup cilantro, finely minced
- 1 lime, zested
- 1/3 cup lime juice, freshly squeezed

- 1 medium jalapeno, finely minced (seeds removed and discarded)
- 3 cloves garlic, finely minced
- 1/2 teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground coriander
- 1½ pounds peeled and deveined shrimp, (16-20) thawed if frozen

Instructions
- In a shallow dish; add cilantro, lime zest, lime juice, avocado oil, jalapeño, garlic, kosher salt, black pepper, cumin and coriander. Whisk to combine.
- Toss the shrimp in the garlic lime marinade and let sit for no longer than 10 to 15 minutes (this will depend on the size of your shrimp).
- Meanwhile, preheat your grill to 500°. I like to thread the shrimp on to sets of 2 skewers and place in a rimmed metal pan or tray. Pour remaining marinade over top.
- Once the grill is pre-heated, generously grease your grill grates. I do this by adding some avocado oil to a small bowl and soaking it up with a wad of paper towel. Use tongs to wipe the oiled paper towel on the grill grates.
- Place the garlic cilantro lime shrimp skewers on to the prepared grill grates. Cook for about 3 to 4 minutes, turn and cook an additional 2 to 3 minutes or until the shrimp is opaque and fully cooked.
- Remove and serve over rice or tuck into corn tortillas with your favorite toppings. (see post for specifics)

I like grilling Shrimp. They are easy to get on the skewers. They cook quick and they turn such a lovely rosy pink. Many people don’t like fish, but they seem to like shrimp. So that is good too. So many food related issues when cooking for several people. The lime adds a nice ‘I am on vacation’ taste to the shrimp.
