Ingredients
12chocolate sandwich cookiesplus more for serving, if desired
1teaspoonmint extract
3/4teaspoongreen food coloring
1splashvanilla extract
1/2cupmilk
32ouncesvanilla ice cream(or 2 pints) use a quality ice cream with a high fat content
whipped creamfor serving, optional
maraschino cherriesfor serving, optional

Instructions
Set the ice cream out on the counter 15 to 20 minutes prior to making. Meanwhile, place the chocolate cookies into the bowl of your food processor and blend until it resembles small crumbs.
To a blender, add extracts, food coloring, milk and ice cream. Blend until smooth.
Add in the cookie crumbs and pulse to combine.
Pour into glasses and serve with whipped cream and a cherry on top.
