Ingredients

  • 2 cups unbleached all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon sugar
  • 1 teaspoon kosher salt
  • 10 tablespoons cold unsalted butter
  • 3/4 cup whole milk

Instructions

  • Line a rimmed baking sheet with parchment paper and preheat your oven to 400°.
  • In a large mixing bowl, measure and add the flour, baking powder, kosher salt and sugar. Whisk to combine.
  • Next, drop in the cold unsalted butter.
NOTE: Before I start making the drop biscuits, I will cut the butter into pieces, put them into a bowl and pop them into the freezer for a few minutes.
  • Using a pastry blender, cut the butter into the dry ingredients until it resembles coarse meal with pea-size pieces.
  • Pour in the milk and using a fork, stir it into the flour mixture until evenly moist. The dough should not be overly wet.
  • Divide the dough into 8 portions. Use a scoop to gather each individual portion and place (mound) on the prepared pan about an inch or so apart.
  • Bake the drop biscuits on the middle rack of your preheated oven for 20 minutes or until golden brown and a toothpick comes out with moist crumbs attached. Rotate the pan halfway through baking to ensure even baking.
  • Serve warm or at room temperature. See post for ways to enjoy homemade biscuits!
