This Raspberry Pistachio Salad is simple yet so flavorful. In it, juicy fresh raspberries, chopped pistachios and crumbled salty feta sits atop of your favorite leafy salad blend and is drizzled with a homemade fresh raspberry walnut vinaigrette.
Yields 1 serving but can easily be doubled or quadrupled to serve more.

Ingredients

  • 2 to 2½ ounces leafy greens
  • 1/2 cup fresh raspberries
  • 1/2 ounce crumbled feta cheese
  • 1 tablespoon chopped pistachios
  • 2 tablespoons creamy raspberry walnut vinaigrette
  • freshly ground black pepper

Instructions

  • In a shallow bowl or plate, add leafy salad greens. Top with raspberries, feta cheese and chopped pistachios. Drizzle with vinaigrette and season with a little freshly ground black pepper.
