This easy Sheet Pan Lemon Garlic Tilapia with Asparagus is as simple as it is delicious! Tilapia and fresh asparagus are brushed with a lemon, garlic and herb butter, then quickly roasted on a single sheet pan. Perfect for any night of the week!

Ingredients

  • avocado oil spray
  • 4 tilapia fillets about 4 ounces each
  • 10 ounces asparagus spears trimmed, thin stalks work best
  • 4 tablespoons unsalted butter
  • 2 cloves garlic finely minced
  • 1/2 lemon juiced
  • 2 tablespoons minced fresh parsley
  • 1/2 teaspoon kosher salt
  • freshly ground black pepper to taste

Instructions

  • Preheat your oven 400°F (OR 200°C).
    Place a piece of parchment paper (or aluminum foil) into a large rimmed baking sheet. Spray with avocado oil and arrange the tilapia filets, pat them dry with paper towel. Next, arrange the asparagus on both sides of the asparagus.
  • Melt butter in a small saucepan. Once melted, remove and add in garlic, parsley, lemon juice, kosher salt and lots of freshly ground black pepper. Stir to combine.
  • Spoon the garlic lemon butter over top of the tilapia and asparagus. Use a brush to spread the butter mixture to evenly cover the fish and asparagus.
  • Place in a preheated oven and bake for 10 minutes, rotating the pan half way through. Then move it to a rack in the highest position in your oven and turn the broiler on. Broil for 2 to 3 more minutes or until the fish is completely opaque and flakes. Watch carefully to avoid burning.
