Elevate your BLT game with this Smoky Chipotle Salmon BLT sandwich! Toasted whole grain bread slathered with an easy homemade chipotle mayo and topped with a smoky Mexicali spiced salmon, crispy bacon, fresh lettuce and tomato. This recipe yields 4 sandwiches.

Ingredients

FOR THE CHIPOTLE MAYO:

  • 1/2 cup mayonnaise use your favorite
  • 2 teaspoons lime juice
  • 3/4 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon chipotle powder
  • 1 small pinch kosher salt

FOR THE SANDWICH:

  • 12 ounces center cut bacon cooked until crispy
  • 1 pound sockeye salmon filet skin removed, divided into 4 equal portions
  • avocado oil spray or use ghee oil or extra light olive oil spray
  • 1 tablespoon Mexicali seasoning
  • 8 slices thin sliced whole grain bread I like Dave's Killer Bread (thin sliced)
  • 1 tomato sliced
  • 4 leaves lettuce use your favorite (romaine, iceberg or bibb)

Instructions

MAKE THE MAYO:

  • In a bowl, measure and add mayonnaise, lime juice, smoked paprika, chipotle powder and chili powder with a small pinch of salt. Whisk to combine and refrigerate until ready to use.

MAKE THE SANDWICH:

  • Working in batches, place slices of center cut bacon into a cool, large skillet. Heat on medium to medium-low, turning occasionally until fully cooked and desired crispiness. Transfer  the crisp bacon to a paper towel lined plate and set a side. Repeat with the remaining bacon.
  • Pat the skinless salmon filets with paper towel. Place them in a clean dish or pan and spray with avocado oil. Season with Mexicali seasoning.
  • Preheat your air fryer or oven to 400° and cook (in the air fryer) for 6 to 7 minutes or until the fish is opaque and flakes easily. It may take a few minutes longer if cooked in the oven.
  • Meanwhile toast the bread and slather the inside of one slice with some of the chipotle mayo.
  • Top the mayo with a cooked salmon filet, bacon, a slice of tomato and lettuce.
  • Top with your second slice of toasted bread and enjoy!
